We make the thing you eat after the meal

Pachak is not a snack. It is the full stop at the end of a heavy Indian lunch — the thing that gets passed around after the plates are cleared. Bhaukaal Goli exists because most of what is sold as pachak now tastes like chalk and food colour.

Whole spice, ground here

We buy anardana, harad and hing whole, from the same three suppliers every season, and grind them in our own unit. Ground spice loses its edge fast — buying it pre-ground would be cheaper and it would also be the reason our goli tasted flat by the time it reached a shelf in Kanpur.

Small batches, on purpose

Hing peda is cooked 20 kg at a time on a slow flame. There is no instrument that tells you when it is done; the colour does. That is the part of this that does not scale, and we are not trying to make it scale.

Every format the trade actually asks for

Pouches for homes. Individually wrapped 12 g sachets in counter jars for shops, restaurants and offices. Shelf-ready trays for the classic paan-shop strip. Cartons with GST invoices for distributors. We built the formats around how the product really gets sold, not the other way round.
