Where it comes from

It started in Bawani Khera.

A small town in Haryana where the goli after lunch is not a treat, it is the full stop. Plates cleared, someone reaches for the pouch, and it goes round the table before anyone gets up. Bhaukaal Goli is that pouch — the recipe that got passed around, made the way it was made then.

What “bhaukaal” means

Up there it is the word for swagger: the kind a thing earns by being loud and honest. It is what a good anardana goli does when it hits — salt first, then the sour, then the warm cumin, and a tail that keeps talking after the meal is forgotten. Most of what is sold as pachak now tastes like chalk and food colour. We named the company after the opposite of that.

Whole spice, ground the same week

We buy anardana, harad and hing whole, from the same suppliers every season, and grind them ourselves. Ground spice loses its edge fast. Buying it pre-ground would be cheaper, and it would also be the reason a goli tastes flat by the time it reaches a shelf.

Small batches, on purpose

Hing peda is cooked in small pans on a slow flame; there is no instrument that says when it is done, the colour does. Goli is pressed in batches small enough that someone tastes every one. That is the part of this that does not scale, and we are not trying to make it scale.

Four moods, one shelf

Tangy — imli, anardana, aam, nimbu, amla: sour fruit and black salt with a sweet tail. Bold — hing, lehsun, ajwain, harad: the strong ones. Churan — coarse-ground powders you eat by the spoon. Peda — soft, slow-cooked pieces of fruit, jaggery and hing. Start with Anardana or Imli if you are new to it; start with Hing if you are not.
